Yep, it only happens four times a year... The great quarterly Chicken Curry cook-up. I make enough for three months (one meal a week) and freeze it in little one-serving plastic containers. The house reeks of curry and onions. My husband hates it!

Here is the recipie, for those interested. I kinda modified my Mum's one.


1kg (2 1/4 lbs) of chicken breast (with skin and fat cut off)
2 med potatoes
2 small kumaras (Polynesian sweet potatoes)
10-12 button mushrooms
2 large carrots
2 courgettes
2 heads of brocolli
2 onions
2 cloves of garlic
1 splodge of Worcestershire sauch
1 splodge of chutney or pickle or whatever you have in a jar
4 tablespoons of chicken stock
6 teaspoons of mild Indian curry powder (for a really mild curry - use more or a hotter version, if you like it hot)

Cut the chicken into cubes and brown in a little oil. I use a huge soup pot with a glass lid for the cooking. Dice onion and garlic and throw in. When chicken is browned, squirt in some globs of Worcestershire sauce and chutney or pickle. Add two cups of water and stir. Add the chicken stock and curry powder and stir. Throw in the carrots and mushrooms. Cover and simmer on a low heat for a while. Mix in potato and kumara. Simmer a bit more. Mix in brocolli. Simmer a few more minutes. Mix in courgettes. Simmer a little longer. Hopefully all the veggies have reached the same level of softness by this time. Serve with rice - I use Jasmine rice.

LOL, that must be the English name for them. I have seen another name used...

In New Zealand we tend to use British-isms in our speech, seeing as about 3/4 of us hail from the mother country somewhere on our family trees!
